Pantry Challenge FINALE Meal Prep & Results: We Survived 9 Weeks!
In the final week of our realistic Pantry Challenge, we’re still eating delicious, comforting meals on our strict $150 monthly fresh grocery budget! This week we’re batch cooking fluffy homemade cinnamon roll dough with two fillings—classic cinnamon and pumpkin spice—topped with cream cheese frosting. For lunch, easy homemade pizza pockets go straight to the freezer. Dinners are cozy soups: spicy fajita chicken soup and hearty veggie soup. We’re supplementing with boiled eggs from our chickens, fresh fruit from the store (bananas, milk, and sale items), and canned fruit from the pantry. Everything is prepped in batches to save time in the kitchen—perfect for busy weeks!
This week’s realistic meal plan:
Breakfast: Homemade pumpkin cinnamon rolls + plain cinnamon rolls with cream cheese frosting (batch baked & frozen)
Lunch: Homemade pizza pockets (freezer-friendly)
Dinner: Spicy fajita chicken soup + veggie soup
Snacks: Boiled eggs, fresh & canned fruit
